American Tries Brazilian Candy

Hey loves!

A family friend’s grandmother came to the states from Brazil yesterday and she brought a bunch of goodies with her. ย She was telling us that Brazil doesn’t have as many sweet treats as the United States. She spoke fluent Portuguese and English so it was fun learning Portuguese and interact with her. I’m excited to try this candy. it reminds me of when I was in Mexico and brought back candy for my friends and classmates to try.

Bala Juquinha Tutti Frutti

This candy tastes amazing! At first, it tasted like a fruity cough drop taffy then it turned into a chew gusher without the juice. ย To be honest it was better than any American candy I’ve tried. It was hard to describe what American candy the tutti-frutti tasted liked.

Serenata de Amor

This candy is a chocolate covered waffle with a toffee center. I didn’t care for this piece of candy. It’s a little lackluster for my liking. The American sweet that I would compare this piece of candy to is a chocolate waffle cone.

Carmel Peanut Bar (I don’t know the Brazil name)

This candy taste like Crunch N Munch popcorn. It even smells exactly like the Crunch N Munch popcorn. I don’t really like the sweet treat that much. The caramel was very sticky and too sweet for me.

Clamel AB Sobremesa A base de Batata Doce

This piece of candy smells like strawberry baby food. This candy has a very sugary consistency. The inside of the candy has a strawberry gel center. I don’t really like this candy at all. The American candy I would compare it to is candy apple mix that isn’t fully mixed yet.

Chocolate Bar (I don’t know the Brazil name)

This candy smells spicy. This piece of candy is not chocolatey at all. This candy is fruity. It’s like an American fruit snack in a compact bar that looks like a chocolate bar. The verdict is still out on how I feel about this sweet treat.

This candy taste like a banana flavored taffy. It smelled very sweet. I really like this candy a lot. Like the first candy on the list, this candy was one of my favorites.

This piece of candy smells like peanut butter. This piece of candy looks like square of ย peanut better. It taste like Reese without the chocolate. This piece of candy made it to number three of my favorites from the pieces I have tried.

How To Make Cauliflower Buffalo Wings

I have been loving cauliflower buffalo wings since trying them at California Pizza Kitchen. I went on Pinterest to see if I could find a similar recipe and I did. Click the picture below to go to the website where I got the recipe.

Ingredients

  • 1 head cauliflower cut into bite sizes
  • 1 egg scrambled with a dash of water
  • 1 cup gluten-free all purpose flour
  • ย 1/2 cup Frank’s RedHotยฎ Buffalo Sauce
  • 1/3 cup butter melted

How To Make Cauliflower Buffalo Wings

First, I made an egg scramble with a dash of water to dip the cauliflower in.

This is a mix of vegan butter and buffalo sauce.

Second, I cut up the cauliflower into chunks. Third, I dipped the cauliflower into the egg scramble then I dipped them into flour. Fourth, I put the cauliflower into the cast iron pot with olive oil. Fifth, I took the golden crisp cauliflower out the pot onto a napkin before putting the cauliflower into the buffalo sauce.

How to make cottage cheese pancakes

Hey loves!

My mom founded this recipe on how to make cottage cheese pancakes online. Yes you read right cottage cheese pancakes. During the six week challenge we had limited food items that we could choose from to eat. Since we both were getting bored of the same old same old she decided to start looking for creative recipes that we can try out.

To be honest when she told me was making cottage cheese pancakes I thought being on that challenge really went to head and was making her go insane. I was not a supporter of this idea at all but she proved me wrong.

How to make cottage cheese pancakes

  1. 1/2 cup of fat free cottage cheese
  2. 1/2 cup of Gluten free organic oats
  3. 4 Egg whites
  4. 1 Tsp of cinnamon & vanilla
  5. 1 Tsp baking powder
  6. Blend up all the ingredients and pour the mix into a non stick pan.
  7. Then add your speciality add-ons (frozen blueberries, pecans and etc.
  8. Continue making the cottage cheese pancakes like normal pancakes.

This is the finished product of the cottage cheese pancakes and they were actually delicious. I was so shocked they tasted better than original pancakes.

Holiday Traditions!

Hey loves!

Binge watching Hallmark movies has paid off. I’ve started to incorporate the corny hallmark traditions into my own family traditions! Side note when I call the traditions “corny” I don’t mean it hastily. I mean it in the endearing heart-warming sense. It was more fun than I expected to make holiday cookies and the gingerbread house. I had a blast!

My Final Week Thoughts

This is the final week of my Get Fit Now Challenge! I’m excited about the end and a tiny bit sadden that this is my last week. Get Fit Now has been an experience never the less. I have had some tough challenges with the management and their disorganization which has been a hugeย inconvenience on my journey with this gym! This gym is not a flexible gym at all. It’s either their way or the highway. A lot has changed from the beginning of the challenge until the final week of the challenge. I will leave my two cents to the final post I document about my experience and final results with this gym.

My Last Meal Prep

My Breakfast

For my last breakfast, I will be eating egg white spinach omelet with ground nutmeg and cinnamon sweet potato.

My Lunch

For my last lunch of this challenge, I will be eating half a cup of rice with soy protein caramelized garlic with onions sauteed with soy sauce and vegetable broth. For my veggies, I will be eating half a cup of collard green season with vegetable broth and Badia seasoning.

My Dinner

For my last dinner, I will be eating broiled black bean burgers on a bed of salad with peanut on the side as my fat for the night.

My Verdict (Will I Stay or Go?)

The verdict is still out stay tune for the results!

How To: Eat Healthy When Dining Out

Hey loves!

A lot of people have been commenting on my healthy lifestyle and how hard it is to keep it up when dining out. I’m here to say that is not the case at all. Having a healthier lifestyle is a mindset change first and foremost! Don’t think about what you can’t have because you can eat everything in moderation.

Dining Out Meals

Subway

This meal I ate a veggie patty salad. I had the person fixing my food put the “sub” in a bowl with two veggie patties, pickles, lettuce, banana peppers, cucumbers and vinegar & oil.

Farm Burger

This meal I ate a quinoa lettuce wrap burger with a side of sweet potato fries.

Bezoria

This is a vegan platter filled with all types vegetables with rice, falafels and hummus.

Red Robin’s

In this meal I ate a Boca vegan burger with fries. This meal I could have been a little more clean with what I was consuming, but I was having an off day lol.

These are just some snapshots of my meals when I dine out. When eating out you just have to be more conscious about what you consume still someone else is preparing your food.

What I Eat: Week 1 Get Fit Now!ย

Breakfast


Ingredients used

  • Red potatoes
  • Yellow bell peppers
  • Red bell peppers
  • Green bell peppers
  • Onions
  • Tofu
  • Tiny amount of coconut oil


After the chopping up of the veggies and potatoes, I put them in the oven at 450 degrees. I cooked the veggie and potato mix for 40 minutes. 

While that was on the stove I start to chop up and season my tofu. I cooked the tofu in a little coconut oil and seasoned it with Mrs. Dash southwest chipotle seasoning and Louisiana hot sauce.

Lunch

Ingredients used

  • Celery
  • Cucumber
  • Red bell peppers
  • Orange bell peppers
  • Onions
  • Tiny bit of coconut oil
  • Bocca original veggie protein
  • Stir-fry seasoning


I cut up all the veggies and put them in a stir-fry pan on medium-high heat. I let the veggies cook for about 8 minutes before adding the veggie protein and seasoning. Once the meal was seasoned I let in steam in the pan for another 6 minutes on low heat. After I turned the stove top off I packed the veggie stir fry into meal prep containers.

Dinner


Ingredients used

  • 3 stalks of romaine lettuce
  • 2 bocca grilled patties
  • 1 pickles
  • Banana peppers
  • Dijon mustard

It took little to no time to prep my dinner. I just chop up the stalks of lettuce and warmed up the bocca protien to top on the bed of lettuce. I added banana peppers and sliced off my pickles next then Bon Appetite!

Dinner in a Pumpkin

Hey loves!
I can officially check eating my dinner from a pumpkin off my list! It was delicious. The butternut squash that I topped with home roasted pumpkin seed  dashed with sea salt blended extremely well with the pumpkin inside. I thought it would be a little weird eating the soup in the pumpkin but it didn’t.

How to Make Vegetarian Soul Food Pt. 2

How to Make Vegetarian Collard Greens


Ingredients used in the meal 

  • Collard greens
  • Veggie broth
  • Badia seasoning 
  • Distilled vinegar 

When buying green you first have to make sure that they are cleaned. For example, the collard greens used in the recipe were washed three times because greens can carry a lot of dirt.

First, thing I did when cooking the greens is to find and put them in a pot that won’t smother them. Greens need room when cooking because they shrink down in the seasoning of picking. 


Second thing is to add the broth of your picking. I am a vegetarian therefore I used vegetable when seasoning my greens. 

Then you add your seasoning. My all time favorite seasoning to cook with is Badia seasoning. The flavors are blended so well I kid you not. I even used to season my meat with this seasoning when I wasn’t a vegetarian. 


Now that the greens have some flavor on them. Cook them on high to mid heat for about 20 minutes before check in on them. When you check on your greens stir them as well so the whole pot is seasoned greens and not just one part.

How to Make Vegetarian Soul Food Pt. 1

Growin up in the south I have a fond regard for soul food (depending on the cook lol). Since I have become vegetarian I can not enjoy the food like I used to because it either contains meat or meat stock in every dish. When I was grocery shopping this past week I’m going to make some vegetarian soul food since I have been wanting to eat some collard greens for a while now. This post is going to be a three-part post. First I going to explain how to make vegetarian stuffing.

How to make vegetarian stuffing

It’s not hard at all to make your favorite dishes vegetarian-friendly. This dish, in particular, I didn’t add meat of chicken stock in the meal. I used all veggie products.

Ingredients used

  • Celery
  • Green, yellow and red peppers
  • Yellow onion
  •  Cornmeal
  • Vegetable Broth
  • Cranberry jellied sauce

First, all of your veggies are chopped up and put into a pot cover with vegetable broth in order for them to soften. Those vegetables are going to be cooking at a temperature of five to six on the stove. Higher degrees will result in mushier veggies.

Next, is to grease your castiron pot with a butter and place the pot in the stove to get preheated. The stove will be set at 400 degrees.

Third, is to make your cornmeal and once your pot has preheated you can add the cornmeal to the pot.

The cornmeal cooks for about 20 minutes and then you can take it out of the oven and start to mash the cornmeal up. The cornmeal gets broken up so that you can add the veggies mix to the meal to create the stuffing.

Once the veggie mix is added to the cornmeal you mix it around and add a little more vegetable broth if the mixture seems dry in certain areas. Then put it back in the oven for 15-20 minutes for the top of the stuffing to brown.


Finally, the step we have all waited for is to eat and enjoy your vegetarian style stuffing!
